Avocado Toast Egg-in-a-Hole, the perfect 5 minute breakfast to make the one you love!
You heard of avocado toast? Egg-in-a-hole? Well I combined both ideas to create this easy breakfast toast made with mashed avocado, eggs over easy and a few dashes of hot sauce. Five (5) ingredients, five (5) minutes to make, doesn’t get better than that!
I’m obsessed with avocado toast and eggs lately as you might have noticed! I was thinking about Valentine’s Day breakfast ideas and forgot I had these heart shaped cutters (affiliate link), so immediately this came to mind. You don’t have fancy cutters to make this, you can keep it simple and use the rim of a glass to cut out a hole.
To make them, simply cut a hole out of the bread, spray some oil in a skillet, place the bread in the skillet and gently drop the egg in the center. Let that cook until it sets to your liking, then spread the avocado on the bread. I like to top mine with hot sauce and serve it with some fresh fruit.
Avocado Toast Egg-in-a-Hole Ingredients
- Ripe Avocado, for mashing
- Bread, for toasting
- Eggs
- Olive Oil Spray or Misto (affil link)
- Salt and Pepper
Tips for saving leftover avocado:
- To store unused ½ of avocado, wrap tightly with plastic wrap and place in refrigerator. They also sell avocado keepers (affiliate link) that claim to keep them fresher longer.
- Leave the pit in and get the wrap as close to the surface of the fruit as possible.
- If browning occurs, gently scrape the exposed flesh with a butter knife and voila, beautiful green avocado lies within!

Avocado Toast Egg-in-a-Hole
Ingredients
- 1 slice whole wheat or whole grain bread
- 1 oz avocado
- olive oil spray
- 1 large egg
- Kosher salt and freshly ground black pepper
- hot sauce, optional
Instructions
- With a heart shaped cutter or the rim of a glass, press a hole in the center of the slice of bread.
- Mash the avocado with a fork and season with salt and pepper.
- Heat a skillet over medium-low heat and spray with the oil. Place the bread and the cut out piece on the skillet and crack the egg straight into the center of the hole.
- Cook until the egg sets on the bottom, about 1 minute, season with salt and pepper and flip over with a spatula, season with salt and pepper the other side.
- Cook the other side until the yolk is to your liking, I prefer mine soft.
- Remove and top with mashed avocado and hot sauce if desired.

First time making egg in a hole. How fun. Ended up using an entire avocado which amounted to 3/4 cup and Dave’s Killer Bread, so the calorie count was 280 and it was delicious! Been successful with weight loss and maintenance without being on a costly diet plan. Thank you Gina for providing nutrition for everyone no matter what diet they are on. Avocado trick: Spray or brush open avocado with oil and lay open-side down on a plate in the frig. As my frig is always packed, I spray the cut side, wrap in plastic, drop into a plastic bag with all the air squeezed out. Lasts a couple of days without discoloring. If that doesn’t work for you, use the side of a spoon to lightly scrap off the oxidized top layer. Good as new underneath! Yum!

I used Dave’s Killer Thin Sliced 60-calorie bread, 1/4 of an avocado, a big slice of tomato, and a hard-boiled egg I had on hand. Heavy sprinkle of the Everything seasoning, and for 5 SP, a great breakfast that will keep me until lunch. Thanks for another brilliant idea, Gina.

I think it works better you if you toast first side, then flip and crack egg in hole. Cook till set, flip and cook for 30 -45 seconds to cook off runny top. When you shake the pan easily and the egg releases, it is done.
Sprinkle with Everything Bagel seasoning or squeeze a lemon wedge over the mashed avocado and sprinkle with a little salt.
Yummy, can’t wait! Question about the points, Gina – my WW app says that ½ a small avocado is 4 Freestyle points, and toast is 2, making this a 6 point meal (not 4 as you have listed). In the ingredients you list 1oz avocado, but isn’t ½ an avocado more than 1oz? What am I missing?
It says to use 1 oz. Which is 1 SP.

Can anyone tell me how to put together a meal plan? I am struggling with what goes with what.
This is a great breakfast. Slice some nice ripe tomatoes and a couple of green onions (scallions is what some call them) maybe a little cucumber to eat along with it and you have a wonderful lunch also…We like to have Breakfast for supper also occasionally.
Does the bread count in the calories?

This is our first year with chickens (and the farm) and I am trying to figure out different things to cook with the copious amount of eggs. This looks great. All of us(except my youngest) love avocado.
Forgive me, but I will never buy any product from China that comes in contact with food that goes in my body. Like the recipe, but I'll use a cookie cutter that's made in the USA.
